Healthy Flourless Blueberry Muffin Recipe

Happy New Year! I’m experimenting with healthy new recipes this year, and here’s one I tried that I wanted to share: flourless blueberry muffins with just four organic and natural ingredients:

  • Bananas (2)
  • Eggs (2)
  • Blueberries (1 cup)
  • Peanut butter (1 cup)

Mix all of the above ingredients together in a bowl using a whisk. Poor evenly into a muffin pan with paper muffin cups or grease the pan beforehand with non-stick cooking spray, oil or butter.  Bake at 350 degrees for up to 20 minutes. Easy and delicious, low in sugar and packed with protein, antioxidants and potassium. Feel free to give it a try and enjoy.
